Pinterest Blueberry Muffins-yum!!!

...Operation Bye Bye Baby Weight is in half swing! I say half because I'm not to the point of cutting calories and counting every single thing I put in my mouth since I'm still breastfeeding. Once I start that (around her first birthday), then it will be in full swing. In the meantime, I'm trying to exercise (I even ran 12 minutes the other day-hell yeah!), cut out sweets and trying to eat healthier aka no more cheesey sides with dinner instead "yummy" vegetables!

I've turned to Pinterest for some ideas and found some really good ones! Saturday morning, I made these:

The original recipe is here and was actually for Strawberry Shortcake Muffins. I had a bag of frozen blueberries so that's why I switched out the fruit. I also asked Matt to buy the Greek yogurt. He came home with blueberry and honey flavored...not plain. I have to say though that I think the blueberry flavored with the blueberries made it extra yummy. They weren't super sweet but they were VERY filling.  I also just didn't use any liners, just put them in the tin and sprayed the tins cups.

Here's the recipe:
2 1/2 cup Oats (old fashioned kind, not quick cooking)
1 cup Plain low fat greek yogurt
2Eggs
1/2 cupBaking stevia OR 1 cup sweetener of choice that measures like sugar 1
1 1/2 tspBaking powder
1/2 tsp Baking soda
1 1/2 cup Strawberries, diced, and patted dry + (optional 1/2 cup strawberries, diced to place on top of muffins)
Optional1 tsp lemon juice

The paper liners don’t work well when baking with a base that does not include flour (which is the case with this recipe), they always seem to stick to the paper. If you don’t have a silicone muffin tin or liners, I recommend buying the foil cupcake liners at the store, and removing the paper inserts so you are only using the foil part of the liner! That way no sticking will occur!

Preheat oven to 400 degrees. Line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan).


Place all of the ingredients (except the strawberries) in a blender or food processor, and blend until oats are smooth. Pour mixture into a medium sized bowl, and stir in strawberries. Divide remaining 1/2 cup diced strawberries over the top of each muffin. (This step is optional, but it really makes the strawberries burst with color and flavor on top of each muffin!)


Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.

This one has no title but it was chicken, green beans and red potatoes. OMG! This was so easy and so delicious! I figured we'd have leftovers but DH scarfed it all down. Definitely a repeat meal.

Bacon & egg muffins I made these one morning and then took it to work to reheat for dinner, definitely yummy and easy so we'll do it again. A little on the greasy side though.

Whole chicken in a crockpot-so good and EASY! Matt forgot to lay it out the night before so we put it in rock solid frozen and by the time we got home, it was falling off the bone. This was so tender and so much, we ate off it the entire weekend. Couldn't really taste the Coke (maybe because of all the water from when the chicken thawed?) but could definitely taste the lemon.

We're having Easter with my family a couple weekends early at my house and I plan on searching Pinterest for some delicious dishes!

I didn't even realize it while I was there, but by the time I was down the street after leaving your house I was starving! I so regretted not eating a muffin or two. Now I regret it even more bc they look delish!!!
