Easy Chicken Cacciatore...

...well I tried another crockpot recipe from this post. Last night's meal was Easy Chicken Cacciatore from Going Jane. Everyone kept asking me what cacciatore was and I had no idea!!! The recipe:

Ingredients

4 boneless, skinless chicken breasts
4 oz. can of sliced mushrooms
1/2 cup water
26 oz. jar spaghetti sauce
1 tsp Italian seasoning
Spaghetti Noodles
Mozzerella Cheese

Directions:Put the chicken breasts down in your crockpot.
Top with mushrooms, water and half the sauce. Sprinkle the seasoning on top.
Cover and cook on low for 4-6 hours. When you're ready to serve, warm the remaining sauce and toss it with your cooked spaghetti—or any other kind of pasta to your liking or that's in your pantry. Top with cheese.

Finished product:

My mistake was that I put too much water in the crockpot but it still tasted yummy. Matt didn't add anything to his AND went back for seconds which as you know at our house, that's a HUGE deal!!! I'm eating leftovers for lunch today-yum!!!

Gotta love the Crock Pot! I'm also guilty of always over-watering my meals made that way. Doesn't it seem like everything is going to dry up?

Looks great, and I am all about left-overs for lunch too.

My in-laws are strange in that they eat huge meals and rarely comsume the leftovers--I am trying to show them what they are missing.

Yum! Can't wait to try this. I'll probably use rice though. That's how my momma always made it. :o)
